Att växa upp med mamma och mormor i köket har lärt mig vikten av att laga mat som är både enkel och näringsrik. Min kärlek för att skapa olika röror och pålägg kommer från dessa stunder. Ett av mina favoritrecept, som många av er har fått smaka på mina event tillsammans med mitt morotsbröd, är denna näringsrika morotsröra. Morötter är stapelvara i mitt hem. De är rika på vitaminer och mineraler, särskilt betakaroten som omvandlas till vitamin A i kroppen, vilket är bra för synen, hudens hälsa och immunsystemet.

Delicious and Nutritious Carrot Spread

500 g carrots
1 tsp Celtic salt or 1/2 tsp regular salt
1-2 tbsp water (depending on consistency)
1-2 tbsp olive oil
1 1/2 tbsp freshly squeezed lemon juice
1 tbsp tahini
1 tbsp apple cider vinegar

Here’s how:

Prepare the Carrots: Peel and cut the carrots into even pieces.
Roast the Carrots: Preheat the oven to 160 degrees. Drizzle with 1-2 tbsp olive oil. Roast in the oven for about 30-40 minutes or until the carrots are soft and have a nice roasted surface. Stir halfway through the cooking time for even roasting.
Combine the Ingredients: Remove the carrots from the oven and let them cool slightly. Place the roasted carrots in a food processor or blender. Add salt, water, lemon juice, tahini, and apple cider vinegar.
Blend to Smooth Consistency: Blend the ingredients until you achieve a smooth and creamy texture. If the mixture is too thick, add a little extra water until you reach the desired consistency.
Store the Carrot Spread: Pour the spread into a clean glass jar and store it in the refrigerator. It will keep for up to 5 days.

Variations:
Carrot Hummus: Add some carrots to your regular hummus for a sweet and nutritious twist.
Tahini Substitute: Replace tahini with peanut butter for a sweeter flavour.
Nutritional Yeast: Add 1 tbsp of nutritional yeast for even more nutrition and a slightly cheesy flavour.
Dijon mustard: Add 1 tbsp of dijon mustard to spice it up.
